Simple Summer Supper

This summer has been busy & difficult, so it is often easier to just keep it simple.  We opted for pasta tossed with a mix of olive oil and lemon juice.

 

We had some frozen peas on hand which we cooked in the microwave and then added some fresh mint and parsley from our garden. We also had some prosciutto which we tore and added to the mix.  We topped it off with some lemon zest and grated cheese.

 

 

   Simple & satisfying yet light for summer night.
