Fish is such a tasty and healthy choice for supper. Our kids have not been huge fans of fish, but with this dish we changed all of that. We have found that vanilla works surprising well with fish and a great way to impart the vanilla is to finish the cooked fish with a little Halen Mon vanilla sea salt.
We had found some wonderful Atlantic cod at the fishmongers. Just dry the fish on a little kitchen towel then season with vanilla sea salt and pepper.
Cut a selection of vegetables into similar size cubes and then cook in lightly seasoned water with a few saffron strands. If you are using any hard root vegetables, like carrots, then start them in the pot first as they will take longer to become tender. Chop a tomato and add it to the mix. Add a few frozen peas at the end for a vibrant green color.
Whilst this is cooking add a little olive oil to a hot pan and then sear and bake the fish (it will only take about 7 -10 mins in a 350F oven).
To check if it is cooked take a small sharp knife and push into the fish flesh then touch to your lip……if it is warm then the fish is cooked.
Pour the broth into the pot then place the fish on top, sprinkle with a little more vanilla salt and garnish with a few herbs.
