Last night we had a friend over for dinner and wanted a light and simple dessert to serve after. Nothing too fancy, but something with loads of flavor. We remembered a blog post we had done years ago (before we knew how to take good photos) on lemon posset and knew it would be perfect. It has always been one of our favorite desserts, but it is also one that we tend to forget about. Maybe for good reason as it is so good that if we made them too often I’d be sure to be about six sizes bigger than I am.
There are only three ingredients in this so I am really not fibbing when I say it is super easy. We started with 150 grams of sugar which we added to a saucepan followed by the zest of one lemon. We added 300 ml of heavy cream and stirred over a medium flame until the sugar was dissolved. The mixture was brought to a boil and then removed from the heat. While stirring we added the juice of one lemon. We strained this mixture and poured the cream into our glasses. We covered ours with plastic wrap and placed them into the fridge to set for about two or three hours.

When I was a little girl my grandparents had a cupboard filled with Imperial Cape Cod clear glasses, bowls and plates. I always loved them so much and inherited them years ago. Since then I’ve collected a few more to add to my collection and at times like this I am so glad I did as they come in handy and look so pretty in a very simple and elegant way. You can use any sort of small glass or custard cup for this- we liked to use juice glasses but since our last post we have managed to end up with only one remaining.
This dessert is light enough that you satisfy your sweet tooth without feeling like you overdid it. The best part is it can generally be made with ingredients you have on hand.
