Madeleines are shell shape cakes that are light and yummy. There are many versions of the recipe, this is our favorite.
Ingedients:
250g flour
150g sugar
4 whole eggs (at room temperature)
25ml milk
4.5g baking powder
1 tbsp honey
1 teaspoon vanilla emulsion (or extract)
powdered sugar for dusting
Melt the butter in the milk over a low heat (you could use a ban marie for this). Just melt do not boil.
Then beat in sugar.
Whisk eggs and then add to the butter, sugar and milk mix.
Sift the flour and baking powder together.
Pour the wet ingredients into the dry.
With a spatula, combine to a smooth batter then let rest for 30 minutes.
While the batter rests, butter your madeleine pan and dust with flour.
Once rested, place the smooth batter into a pastry bag.
Pipe the batter into a madeleine tray.
Bake in a 400f oven for about 12 minutes. When done, they will have browned slightly on the edges and will spring back when pressed in the center.
Turn out onto a cooling tray.
Once cooled dust with powdered sugar.
