Vanilla Grapefruit Cupcakes
  1. Preheat oven to 350.
  2. We used an extra large muffin tin for this recipe. Line six muffin tins with paper liners.
  3. Whisk flour, baking powder, salt and dried grapefruit rind and set aside.
  4. Whisk milk, vanilla, egg whites, sour cream and grapefruit juice. Set aside.
  5. Beat flour and sugar for about five minutes or until light and fluffy.
  6. Add flour and milk mixtures alternating.
  7. Fill paper liners and bake for 20-35 minutes, depending on your oven.
