It has been super humid and hot here lately. While we usually go for a tall glass of water, it is always nice to find a recipe for a summery juice that is both beautiful and refreshing. This recipe for Strawberry Agua Fresca is from Mexico. Agua Fresca means fruit water and while this could be made with a number of other fruits, we selected strawberries because we still have so many from our strawberry picking adventure a couple of weeks ago. The great thing about this recipe is that even if your berries are not just picked (we froze some of ours), you can still use them as they get blended up.
Ingredients:
hulled strawberries (we used about four cups)
1/2 cup of sugar
1/3 cup of freshly squeezed lime juice
a pinch of coarse sea salt
ice cubes
mint leaves
This made four glasses of strawberry agua fresca. We only needed two so reserved the remainder of the juice to make ice pops.
Start by blending your half of the berries with 1 1/2 cups of water in a blender. Puree until smooth and then remove the pulpy mixture and put it in a sieve and using a spatula push the juice through leaving the seeds behind. Repeat this with the other half of the berries and again add water. Pour the juice into a pitcher and stir in the sugar, lime juice and 1/4 teaspoon of salt. You can then add as much water as you like to reach your desired consistency.
We filled our glasses with ice and then added the juice, a berry and some mint leaves. This juice was so good. So, so good actually. The intense flavor of the berries was perfect for summer. We can’t wait to try it with other fruits.
