Blueberry Sorbet

A fresh sorbet of whole blueberries.

 

 

Ingredients:

 

500g of fresh blueberries (frozen could be used).
200ml water
80g sugar
3g sorbet stabilizer (you can buy this online or use pectin or egg whites)

 

 

Mix the water and sugar then heat to dissolve.
Blend the berries.

 

 

 

Add the simple syrup and stabilizer then mix and chill for at least an hour.

 

 

 

Churn the mix in your ice cream maker.

 

 

 

Once made, place in a container and keep in the freezer.

 

 

 

 

This sorbet works great with chocolate. We served them here with some chocolates that we were given when we dined at Per Se in New York.
