When I was in college I had two fantastic friends. The three of us were inseparable. We went to a very small liberal arts college located north of Boston and although there wasn’t much to do in the area, there was a huge Chinese restaurant that was always packed on the weekends. I don’t recall us going there often, but on one occasion I do remember one of the three of us getting very, very drunk on Mai Tai’s. “Mai Tai, Your Tai, His Tai, Her Tai”….we pretty much had to carry her out. And then of course, as true friends do, we didn’t let her live it down. I can’t hear the name of the drink without remembering that night and how much I loved those girls. For a little summer adult treat I decided to make Mai Tai popsicles. Perfectly refreshing for that on the deck cool down after the kids have gone to bed. We added a little extra lime juice to ours because we like the sharp contrast, but if you prefer the flavor of the rum go sparingly on the lime.
Ingredients to make 4 popsicles:
4 measures white rum
2 measures fresh orange juice
2 measures fresh lime juice
12 crushed ice cubes
zest of one lime
Blend ingredients on crush cycle in blender. Pour into popsicle molds and freeze overnight. These are fun and refreshing and a great alternative to the evening cocktail!
