Overnight Oats with Dona Chai

We are suckers for gorgeous packaging and pretty quickly noticed the simple elegance behind the Dona Chai line of concentrates.  What we really fell in love with was the amazing flavor that each of the two products has.  It takes the guesswork out of making your own concentrate and does so much more than just delicious drinks.  Their website is full of easy recipes and we couldn’t wait to try out the overnight oats.

At our house breakfast is usually pretty rushed these days with three of the four of us leaving at different times within the course of 45 minutes.  We get up early, scramble to get kids functioning, fed, backpacks sorted, dog walked and oh my gosh all the eyedrops and allergy medicines…we are not quite in our back to school groove yet despite it being the end of September.  Anything we can do ahead of time is a morning gift and so when we stumbled upon an Instagram picture of overnight oats we knew it was a recipe that would be in our future.

The recipe itself could not be easier.  1 cup of steel oats, 1/4 cup of Dona Chai, 1 1/4 cups almond milk (we used unsweetened), 1 Tablespoon of honey and pistachios (we used cashews in their place but used the pistachios to top it off at the end).  Mix it all up- cover it and put it in the fridge overnight.  The oats will absorb all the liquid and you will be left with a much thicker version when you wake up.  We topped ours off with chopped apples, pistachios and a good drizzle of Bushwick Sauce Company’s apple butter.  Can you say easy? Even better our kids LOVED it.  What we noticed is that it is such a great base for so many different toppings.  The chai flavor is present but subtle.  Perfect for fall mornings and especially perfect for super busy weekday get them out the door to school mornings.  What do you love to top your overnight oats with?
