Polenta makes a great change. This simple preparation is bursting with flavor. This method can be used to make the polenta ahead of time then just grill or sear when you are ready to eat.





We need a firmer mix so I have adjusted the ingredients as follows:
100g of polenta
500ml chicken broth
salt and pepper.




Mix the polenta and the chicken broth then heat over a low flame stirring occasionally.




Cook until it becomes thick and gelatinous. Mix in a knob of butter and season to taste.





In the meantime, line your molds with plastic wrap.





Pour the mixture into the molds and allow to cool.




When the polenta is cool it can be removed from the mold. It will keep in the fridge for several days.





Before eating remove from the plastic wrap then grill or sear in a pan.
