Scallion Herb Crepes Filled with Prosciutto and Manchego Cheese

This is a quick lunch or snack that looks great and tastes even better.

Ingredients:
1/2 cup flour
2/3 cup milk
2 eggs
5 scallions
1 handful of cilantro (corriander)
salt and pepper
4 slices proscuitto
1/2 cup grated manchego cheese
This will make three of four crepes.

Very finely slice the scallions.

Chop the cilantro (corriander) and add to the scallions.

Place the flour in a bowl, season with salt and pepper then make a well and break in the eggs.

Add the milk and the herbs.

Using a whisk, mix the ingredients together ensuring that any lumps are broken up. Pour the batter into a jug and rest in the fridge for 30 minutes.

Heat a little oil or clarified butter in a pan.
Pour the batter into the center of the pan then swirl around to make a thin crepe.

Once just cooked on one side flip over.
Place on the prosciutto and the cheese and cook for another minute.
Fold in half.
And then in half again.

Serve immediately.
