We have been eating turkey leftovers for two days now…our $32 turkey has turned out to be a bargain when you think of all the meals it has served up. Today we decided to make it into a salad and wanted to make it a little bit special so we added a sprinkle of this lovely smoked bacon chipotle sea salt which was a find on our latest treasure hunt at Home Goods.
We started with our leftovers…turkey, pomegranate seeds and stuffing (which we crumbled up into tiny pieces).
We added a spoonful of mayonnaise and a sprinkle of the smoked bacon chipotle sea salt and mixed it together.
We set the leftover mixture aside and sliced two thick slices of country white bread which we then spread with mayonnaise and put under the broiler.
Once the bread was toasted we added a slice of goat cheese and another sprinkle of the sea salt and put the bread back under the broiler.
When the bread was toasted and the cheese was melty we added the leftover mixture to the top and sandwiched it all together. The smokey bacon flavor was what made this sandwich sparkle. It was subtle but made all the difference in the flavor and made this turkey seem less like a leftover and a little more special.
