I’m quite spoiled having a chef for a husband, so this morning before work I decided to make breakfast in bed for the person who usually does all the cooking.
Brioche
Ingredients:
4 cups flour
1/4 cup caster sugar
1 tsp salt
4 tsp yeast
5 eggs, lightly beaten
1/3 cup warm water
2.5 sticks of butter
1 egg lightly beaten, extra
1tbsp sugar
Sift flour,caster sugar and salt into large bowl (I put it in my mixer bowl), add yeast and stir.
Add eggs and enough water until dough is just combined. I did not do this by hand- I used the Kitchenaid bread attachment and let the mixer to the work. The dough kneads for about 10 minutes until it is smooth and elasticy.
Add the butter in small segments. Knead each portion into dough, kneading well after each addition until all the butter is incorporated and dough is smooth and glossy.
Divide the dough into equal portions and shape into pans. I used five mini bread pans.
Place filled bread pans on a cookie sheet and cover with plastic wrap to rise. I let this rise about an hour in a warm location.
Before it goes in the oven brush with the extra egg and sprinkle with sugar. Bake at 400 f. for about 10 minutes and then reduce to 380 f. and bake for 15 more minutes.
This bread is delicious on its own, however, since it is Valentine’s Day and I wanted to do something special I simply turned it into French Toast and sprinkled with powdered sugar and raspberries.
I know that my valentine enjoyed having a morning off from cooking!
