This week we have been harvesting loads of beets, Swiss chard and tomatoes. We quick pickled most of it for easy go to dinner and lunch additions. Quick pickles are a fun and simple recipe. We store ours in the fridge after the lids settle. I love all the bright colors and crisp flavors.
Outside it has been raining hard most afternoons. I feel guilty even typing that as so many of you are struggling through droughts. All my dried out black-eyed-Susans have sprung back to life. We are starting to see apples ripen in the orchard. I have already harvested bowls full of table grapes which I plan on making jelly with this weekend. We also discovered a cherry-plum tree which is so amazing. Little tiny cherries that taste like plums. I’ve never seen anything like it. This garden keeps surprising us.
I’m hopeful for our butternut squash harvest and I’ve been trying desperately to save them from the vine borers. We lost about four winter squash plants in one garden and six in another. The butternuts seem to be hanging on! And since I’m the only one in the family who loves them…I might just luck out.
