With summer’s end not far off we have been cutting back our herbs left and right in hopes of saving them for the dreary winter months when we’d rather not spend $3-5 to purchase herbs in the market.
This week we focused on the thyme. We love to freeze it in ice cubes. It can be used to simply thaw out and go in soups and sauces later in the year.
The water you use to freeze the herbs (in this case thyme) can also be infused with thyme first and then additional thyme can be added to the ice cube trays to create thyme flavored ice cubes.
We love to use these in tall glasses of cranberry juice which we find we need to cut with a bit of water anyhow. This way the cube melts and does the work for us while providing amazing flavor at the same time…no pun intended…
Cut your herbs using some to add to the jug of water while reserving the others for the trays.
Fill the trays with the cuttings.
Add the thyme infused water and freeze.
They really are the perfect way to make summer last all the way into the winter months.
