Thyme Pasta with Garden Tomato Sauce

As the summer comes to an end our garden is still full of wonderful herbs and when friends gave us some garden tomatoes we decided to make a delicious and simple dish. Thyme Pasta with Garden Tomato Sauce.

 

First make some plain pasta. Take 6 eggs, 600g flour and a pinch of salt.
Take some fresh thyme leaves.
Roll out the pasta.
Then cut into spaghetti.
Dice an onion then sweat it down with a little olive oil and a splash of red wine.
Cook down until soft.
Odd diced tomatoes, and tied herbs (Oregano, and Thyme from the garden).
Then cook down, blend and season.
 Cook the spaghetti in well salted boiling water with a splash of olive oil.
 Mix the sauce with the cooked Thyme Pasta add a little Parmesan cheese and enjoy a wonderful taste of a bountiful summer.
